It is very simple. The cakes are ready for frosting once they have cooled. Please choose your preferred frosting and generously spread it between the cake layers and over the top and sides of the assembled cake. Smooth the frosting out with a spatula to make it neat and even.

1) Creating the Frosty Exterior

Ingredients:

  • Icing sugar to dust
  • 500 g natural or golden marzipan
  • 2 -3tbsp apricot glaze
  • Brandy, gin, vodka or cooled boiled water to brush
  • 20 .5cm round fruit cake or see our Christmas Fruit Cake Recipe
  • 500 g white sugar paste icing

For  Decoration:

  • About 75g green sugar paste icing
  • About 30g red sugar paste icing
  • About 70g brown sugar paste icing
  • About 20g white sugar paste icing
  • Edible glue
  • About 5g orange or yellow sugar paste icing
  • 2 -3 Flake chocolate bars

Accessories Needed:

  • 4 1/2 -6cm holly or ivy cutter, or both
  • Small paintbrush

TO FINISH, OPTIONAL:

  • Green and red luster dust
  • Ribbon

Procedure:

Step 1

  • Make the cake decoration a few days ahead by gently heating the jam in a small pan. Sieve the mixture into a small bowl. Spread sieved jam over the top and sides of the cake. Place aside.
  • Step 2
  • Roll the marzipan until large enough to cover the cake on a work surface lightly dusted with icing sugar. Gently smooth into position with your hands after lifting onto the cake. Remove excess. Let the marzipan harden at room temperature overnight.
  • Step 3
  • Prepare a baking sheet by lining it with parchment paper the same day. Once the green sugar paste is 3mm thick, lightly dust it with icing sugar. Make your own holly or ivy leaves. Lay them on a baking sheet lined with foil and lightly scrunch some foil sausages to give them some movement. You will need about 25 trimmings. Reroll and stamp out trimmings. Make tiny holly berries from about 5 grams of red sugar paste and add them to the lined sheet after you’ve made holly leaves. Overnight, let the hardening process take place.
  • Step 4
  • Use the white sugar paste, and roll out the white marzipan until it is large enough to cover the cake. When the marzipan has hardened, dust a work surface lightly with icing sugar and roll out until large enough, you can use brandy, gin, vodka, or water to moisten the marzipan. Then Spread the white sugar paste over the white, smoothing it with your hands. Cut off any excess.
  • Step 5
  • Transfer the cake to a plate or cake stand. I recommend letting the white layer dry overnight at room temperature if possible. You can continue straight away if you have no time.
  • Step 6
  • The first body of the robin needs about 25g of brown sugar paste, which is shaped into a head, plump breasts and a tail (shown with a knife). For the baby bird body, repeat with about 15g, then repeat with another 25g for another adult body.
  • Step 7 
  • We will use the red sugar paste to make the hats next. To make the cones fit, hollow out the bases of two squat cones using sugar paste. 
  • Add ridges to the adult heads with a paintbrush to create a more lifelike appearance. Then, using about 5 grams of red sugar paste, attach a hat to the baby bird.
  • Step 8
  • Make bands for the hat bases with some white sugar paste and stick them on. To add texture, mark with a knife. If necessary, use edible glue to attach the pompoms to the tops of the hats.
  • Step 9
  • Spread the remaining white sugar paste onto the birds’ chests and sides and smooth the edges. Make smaller red ovals from the remaining red sugar paste, and stick them to the centers of the white chests, smoothing the edges.
  • Step 10
  • Finalize by shaping six wings with the remaining brown sugar paste, four larger and two smaller. Use edible glue to attach the stickers to the birds’ sides. Using the orange/yellow sugar paste, shape tiny beaks for the birds and stick them to their faces. Leave the robins to harden overnight on baking parchment if you have time.
  • Step 11
  • The holly/ivy leaves can be lightly brushed with some green lustre, and the berries (if you choose to make them) can be rolled in red lustre. Arrange the dried leaves around the top of the cake (and a little down the sides) with a little edible glue to help them adhere. If you have made red berries, stick them on next.
  • Step 12
  • Arrange your cake and sit the birds on top. If you like, secure a ribbon around the base of the cake, and you’re good to go!
