Ingredients:
Dry Fruits:
sultanas- 350gm
raisins-250gm
dried (sour) cherries, roughly chopped- 200gm100 g
dried figs, roughly chopped-150gm
 chopped mixed peel-150gm
Finely grated zest and juice one orange
Finely grated zest and juice one lemon
Amaretto-200ml
For the cake
unsalted butter, softened, plus extra to grease-250gm
dark brown soft sugar-200 g
medium eggs, beaten- 4
plain flour-150g
ground almonds-100g
mixed spice-3 tbsp
ground cinnamon- 2 tsp
freshly grated nutmeg- 1tsp
flaked almonds-200g
Procedure:
Step 1
⦁ Take a large non-metallic bowl for the soaked fruit and mix all the wet fruit ingredients (described above). Cover and leave it overnight or for 12 hrs.
Step 2
⦁ Preheat oven to 2oo degrees and grease a 10. inch cake mould by lining a parchment paper in it. 
Step 3
⦁ Take a standing mixer, and beat the butter and sugar for about 5 minutes or until it gets light and fluffy. Then Gradually, add eggs and beat very well. 
Step 4: 
⦁ Then add flour, ground almonds and spices and beat briefly to combine all ingredients. Then Use a large metal spoon and fold all the soaked fruit mixture (any liquid). Then add flaked almonds.
Step 5:
⦁ Put the mixture into the greased cake mould and level it using a spatula. Bake for 2 hrs or until the cake is baked. Check your cake condition after 1 hr by inserting a toothpick in its centre. If it comes out clean, then stop baking. Leave to cool in the mould for 10min, remove from mould (in its baking parchment) and cool completely.
Step 6:
⦁ When cool completely, remove the parchment paper. Delicious Cherry and almond Christmas cakes are ready to serve.
