- Baking soda- 3 pinches
- Salt- half teaspoon
- Cinnamon- 1 teaspoon (optional)
- Canola oil- ⅓ cup-
- Coffee or water- 1 1/2cups
- Granulated sugar- 1 cup
- Cocoa powder- 1 cup (unsweetened)
- Sour cream- 1 cup
- Vanilla extract- 2 teaspoon
- Unsalted butter- 14 tablespoons – 7 ounces
- Brown sugar- ¾ cup

1: Add the egg whites and sugar to the bowl of a stand mixer. Whisk slightly with a hand whisk to combine it.
2: Then, create a double broiler by putting water in a pot and boiling it on medium heat. Then, Place the stand mixer bowl on top of the boiling water over the pot to create a double-boiler. Stir it until it reaches 160 degrees on temperature.
3: Once hot, carefully put the stand mixer bowl into the stand mixer. Then, fit the whisk attachment and start quickly whipping the egg white mixture. After 10 minutes, stiff peaks will be performed. When done, stop beating. Check the temperature of the bowl; it should be cooled.
4: Then, whisk vanilla bean seeds, butter, and cocoa powder on low speed. Then add all butter and whisk on medium to high speed. If the Frosting looks curdled, whisk for more than 5 minutes. It will get smooth. If its consistency appears runny, place it in the refrigerator for 15 minutes, then whisk it again to make it smooth.
