I baked cherry and almond Christmas cake before this one, and that also got many positive responses from my family members. Some people are fond of almonds and coffee, so I baked a combo cake of these two: coffee and walnut Christmas cake that was truly loved by my friends.
Ingredients:
prunes (scissored or chopped) – 350 grams
- Raisins – 250 grams
- Currants – 125 grams
- candied orange peel -50 grams piece
- unsalted butter – 175 grams soft
- dark brown muscovado sugar -175 grams
- runny honey – 12 tablespoons
- coffee liqueur- 8 ½ tablespoons
- oranges – 2 – 3 take juice and zest both
- mixed spice – 1 teaspoon
- Cocoa – 4 tablespoons
- eggs (beaten) – 3 large
- plain flour – ⅔ cup
- ground almonds – ⅔ cup
- baking powder -½ teaspoon
- bicarbonate of soda – ½ teaspoon
Procedure:
- Preheat your oven to 180°C (350°F).
- Line a round cake tin completely with baking parchment—both bottom and sides. Cover the entire sides of the cake pan with parchment paper. Then, grease the top of the paper with oil.
- Put all the fruits, butter, sugar, runny honey, Tia Maria, orange juice and zests, spice, and cocoa in a saucepan on low heat. When the butter melts completely, cover it and simmer it for 11 to 12 minutes. Then turn off the flame and let it set for 40 minutes. Meanwhile, start preparing the batter for the chocolate Christmas cake. When it’s cooled, add it to the batter.
- Batter Preparation:
- Take a bowl of stand mixer and beat eggs for 5 minutes. Then add flour, ground almonds, baking powder, and bicarbonate of soda and mix it with a silicon spatula.
- If the batter is too dry, add 3 tbsp milk to soften it slightly. Then, fold all the fruit mixture into the cake batter and pour this batter into a greased cake tin.
- Place the cake in the oven for 45 minutes or until it is done thoroughly. Insert a cake tester into the middle, and it will still be soft and goopy.
- When the chocolate cake is baked completely, place it on a cooling rack to cool. Once cooled, unmould the cake, wrap it in baking parchment and then foil, and store it in a tin if you are not going to eat it right away (like any fruit cake, it has a very long shelf life).
- If you want to ice it, then ice it with whipping cream icing (used in my double chocolate cake) or chocolate ganache ( used in my fudge cake), as I iced my previous cakes.
- Sprinkle chocolate zest on the top of the cake and fix chocolate roll wafers on its sides. Then, place some of the strawberries on it to give it a festive look.
