Ingredients
⦁ 1 cup full of butter, softened at room temperature
⦁ 2 ½ cup granulated sugar
⦁ Four large eggs
⦁ 1 tbsp. pure vanilla extract
⦁ 3 cups of all-purpose flour
⦁ 1/4 cup of cornstarch
⦁ 2 tsp of baking powder
⦁ 1 tsp of salt
⦁ 1 1/4 cup. milk 
⦁ 1/2 cup of sprinkles, plus more for garnish, if desired
FOR BUTTERCREAM
⦁ 1 1/2 cup butter, softened
⦁ Six cup of powdered sugar
⦁ 1/4 cup sour cream
⦁ 1 tsp pure vanilla extract
⦁ 1/4 cup heavy cream
⦁ Pinch of kosher salt.

Procedure:
STEP 1
⦁ Preheat oven to 180C/160C fan/gas 4. Grease and line 4 x 20cm cake pans. You can make two batches of the sponge recipe if you don’t need 4.
⦁ STEP 2
⦁ Mix the sugar, butter, vanilla paste and milk in a large bowl. Beat with an electric mixer (or a tabletop mixer) until light and fluffy. Mix in the eggs slowly, beating well between each addition. If the mixture appears curdled, add a tablespoon or two of flour.
⦁ STEP 3
⦁ Fold in the flour, baking powder, and a pinch of salt. Mix in the milk. Beat to combine the ingredients. Sprinkle the sprinkles over the batter and then divide it between the tins. Bake for between 25-30 minutes until the sponge is golden brown and springs back when lightly pressed. To ensure even cooking, rotate the tins in the oven every 15 minutes. Let cool entirely on wire racks before frosting.

⦁ Make the icing while you wait. Beat the butter with half the icing sugar until it is fluffy and combined. Mix the cream cheese and remaining icing sugar and beat again until well combined. Mix in the vanilla paste. Place a large round nozzle in a piping bag. Add the icing.
