Ingredients
⦁ 1 cup full of butter, softened at room temperature
⦁ 2 ½ cup granulated sugar
⦁ Four large eggs
⦁ 1 tbsp. pure vanilla extract
⦁ 3 cups of all-purpose flour
⦁ 1/4 cup of cornstarch
⦁ 2 tsp of baking powder
⦁ 1 tsp of salt
⦁ 1 1/4 cup. milk
⦁ 1/2 cup of sprinkles, plus more for garnish, if desired
FOR BUTTERCREAM
⦁ 1 1/2 cup butter, softened
⦁ Six cup of powdered sugar
⦁ 1/4 cup sour cream
⦁ 1 tsp pure vanilla extract
⦁ 1/4 cup heavy cream
⦁ Pinch of kosher salt.
Procedure:
STEP 1
⦁ Preheat oven to 180C/160C fan/gas 4. Grease and line 4 x 20cm cake pans. You can make two batches of the sponge recipe if you don’t need 4.
⦁ STEP 2
⦁ Mix the sugar, butter, vanilla paste and milk in a large bowl. Beat with an electric mixer (or a tabletop mixer) until light and fluffy. Mix in the eggs slowly, beating well between each addition. If the mixture appears curdled, add a tablespoon or two of flour.
⦁ STEP 3
⦁ Fold in the flour, baking powder, and a pinch of salt. Mix in the milk. Beat to combine the ingredients. Sprinkle the sprinkles over the batter and then divide it between the tins. Bake for between 25-30 minutes until the sponge is golden brown and springs back when lightly pressed. To ensure even cooking, rotate the tins in the oven every 15 minutes. Let cool entirely on wire racks before frosting.
⦁ STEP 4
⦁ Make the icing while you wait. Beat the butter with half the icing sugar until it is fluffy and combined. Mix the cream cheese and remaining icing sugar and beat again until well combined. Mix in the vanilla paste. Place a large round nozzle in a piping bag. Add the icing.
⦁ STEP 5
⦁ After the cakes are cooled, spread a bit of icing on a baking board. Place 1 of the sponges there—pipe vanilla icing circles around the base of each sponge. Then, top it with the following sponge. The remaining layers should be added in the same manner. Add some sprinkles to the top. Cut into slices and serve.

Some Pro Tips for making Funfetti cake
SPRINKLES
Sprinkles are typically mixed into a vanilla cake base to make a funfetti cake. Sprinkles are folded into the batter before baking to add colour and texture to each bite. If desired, sprinkles can be pressed into the frosting or applied to the cake. Some funfetti cakes even have a centre filled with sprinkles. These cakes are trendy and easy to make.
While the flavour is undoubtedly delectable, you must ensure that you use gluten-free sprinkles. The best sprinkles for a funfetti cake are confetti-style sequins and a Jimmie-only mix. Nonpareil sprinkles will bleed colour into the cake batter, resulting in muddy layers. It’s best to use gluten-free, certified gluten-free sprinkles.
Nonpareils in Funfetti cake
Adding nonpareils to a funfetti cake recipe will turn it into a grey-green mud-coloured mess. Nonpareils are tiny candies coated with food colouring. However, the batter will turn a bilious grey-green colour if you use too many of them. Instead, opt for sprinkles. The colours will add a nice splash to the batter but keep them out.
Be sure to use non-melting sprinkles when making funfetti cake. Sprinkles that look like tiny balls are nonpareils. Stir the frosting with a rubber spatula. It prevents the sprinkles from separating during baking. If you’re going to add coloured jimmies, choose rainbow-coloured ones. Your cake will turn dull if they bleed into the batter.
Decorating with sprinkles
You can use your imagination and decorate your funfetti cake however you like, but some recipes have limitations regarding sprinkles. In this case, you should experiment with the recipe before adding sprinkles. Some recipes call for jimmies, and long, skinny sprinkles, which will not bleed into the cake batter. On the other hand, nonpareils are tiny and will muddy up the colour. Use whichever you like for the outside.
To decorate the cake:
⦁ Use a gel food colouring like Americolor and a small amount of vanilla extract.
⦁ Mix these ingredients with a small paintbrush.
⦁ Press the brush’s bristles on the cake and gently tilt the stand so the colours spread evenly.
The frosting does not have to be perfect, as sprinkles cover imperfections. Once you are done with the cake, cover it with a plastic dome and let it sit at room temperature for at least 3 hours before serving.
