Ingredients:
Dry fruits to be added:
sultanas- 350 gm
raisins-350gm
dried figs, chopped- 200gm
dried dates, finely chopped -150gm
coffee liqueur, -350ml
espresso or strong coffee- 85ml
Cake Batter Ingredients:
unsalted butter, softened-300gm, plus extra to grease
dark brown soft sugar-250gm
Eggs, beaten four large
plain flour-300gm
mixed spice-1tsp 
Ground cinnamon-2 ½ tsp
ground all-spice 
walnuts, roughly chopped-250gm
Procedure:
⦁ Take a large non-metallic bowl, mix the dried fruit, soak it in coffee liqueur and espresso/coffee, cover and leave for 12 hrs. 
⦁ Preheat oven to 200 degrees. Grease a 10-inch cake mold and line it with baking parchment paper. 
⦁ Beat the butter and sugar until it gets light and fluffy for about 5 minutes using a stand mixer. Now gradually add one by one egg, beat very well after adding each. 
⦁ Add sifted flour and spices and beat shortly to mix all. Then add the soaked fruit mixture and walnuts and fold them using a large spatula.
⦁ Put the mixture in the prepared cake mold by scraping the sides of the bowl, and then level the batter in the cake pan. 
⦁ Now bake it for approximately 2hr, or until you insert a skewer and it comes out clean. 
⦁ Once it’s done, please remove the cake pan and let it cool completely as it is in the mold. 
⦁ Then take out the cake and remove the parchment paper from it. You can serve this delectable coffee and walnut cake to your guests or this Christmas with your family gatherings.
⦁ Tips and Tricks: 
⦁ Storing: If you want to keep this cake, wrap the cooled cake with its parchment paper in several layers of clingfilm, followed by a layer of foil. You can store it in a cool, dark place for up to 3 months.
⦁ Batter Consistency: Make sure that your batter consistency is thick. If its consistency is runny or more liquid, all the fruits will sit on the base of the cake when you bake it.
