Ingredients
Cake batter:
⦁ 3 cups  all-purpose flour
⦁ 2 ¼  cups  sugar
⦁ 3 teaspoon baking powder
⦁ 3/4 teaspoon baking soda
⦁ 1/2 teaspoon kosher salt or regular salt
⦁ 1 cup unsalted butter, softened at room temprature
⦁ 1 cup of  sour cream
⦁ 1/4 cup whole milk
⦁ 3 large eggs
⦁ 1 teaspoon vanilla extract
For the streusel topping:
⦁ 1 cup, brown sugar, packed
⦁ 1 cup, all-purpose flour
⦁ 1 teaspoon ground cinnamon
⦁ Pinch kosher salt
⦁ 1/2 cup unsalted butter, softened
For the cinnamon layer:
⦁ 1/4 cup  sugar
⦁ 1 tablespoon of all-purpose flour
⦁ 1/2 teaspoon ground cinnamon
How to proceed:
Streusel Layer Preparation:
Combine the flour, brown sugar and cinnamon in a small bowl. Mix the butter with a fork until it is well combined. Set aside.
Cinnamon layer Preparation:
Combine the sugar, flour, and cinnamon in a small bowl. Assemble the ingredients in a small bowl.
Cake batter:
STEP 1
Prepare a 10-inch cake pan with clarified butter or cooking oil. Preheat the oven to 350°F.
STEP 2
Add the flour, sugar and baking powder to the bowl of the mixer. Use the paddle attachment on your stand mixer to stir the mixture.
Mix the softened butter with the milk. Continue beating on medium-low speed for 2-3 minutes or until the mixture is moist sand.
STEP 3
Mix the sour cream and milk in a large bowl. Add the eggs, vanilla, milk, and eggs to the bowl. Mix the mixture with the dry ingredients. Mix the butter with a beater at medium speed until it becomes smooth. You can leave some small lumps, but they are acceptable.
STEP 4:
Place half of the batter in the pan. Spread the cinnamon-sugar layer evenly over the batter. The remaining batter should be spread over the batter. It is a tedious task as the batter loves to pull off the cinnamon-sugar layer. Add the crumble mixture.
STEP 5
Bake for 55 minutes until a toothpick inserted into the centre comes clean. Cool on a rack for one hour or until the cake reaches room temperature before serving. Your choice.
STEP 6
You can bake this cake in advance. Cover the pan with plastic wrap to protect its shelf life of seven days. It should be kept at room temperature on the counter.
Step 7
Before serving, let cool in the refrigerator for at least an hour. It will help set the frosting and make it easier to cut.
