sultanas – 200 grams
raisins – 200 grams
glacรฉ cherries – 100 grams
candied peel – 100 grams (mixed chopped)
brandy – 125 mlย
For the cake:
Plain flour – 300 grams
Salt – 1 teaspoon
Nutmeg, freshly grated – half teaspoon
Ground mixed spice – 1 teaspoon
Dark brown soft sugar – 250 grams
Eggs – 4 large
Black treacle – 1 1/2dessertspoonย
Butter – 250 grams (spreadable)
Almonds – 100 grams (chopped – with cover)
Lemon zest – 1 lemonย
Orange zest – 1 orangeย
For feeding and topping:
Armagnac or brandy – as requiredย (for feeding cake)
Procedure :
- Soaking of Dry Fruits Before Baking:
- Combine all the fruits and brandy in a bowl and mix it. Cover the bowl and allow the mixture to soak overnight or at least 12 hours.
- Sift the flour, salt, and spices into a stand mixer’s mixing bowl. Then add the sugar, eggs, treacle (in warm form), and butter, and beat everything on low to medium speed until smooth and fluffy.ย
