Ingredients:
3 tsp pure vanilla extract
½ cup granulated sugar
½ cup semi-sweet chocolate chips
½ cup unsalted butter
½ cup light brown sugar
Two medium egg
3 cups unbleached all-purpose flour
2 ½ tsp cornstarch
1 ½ tsp baking soda
1 ½ tsp salt
VANILLA BUTTERCREAM FROSTING
- ½ cup unsalted butter
- 4 cups powdered sugar
- 3 tsp pure vanilla extract
- 4 tbsp milk

Procedure:
- Let’s start with butter, milk, and an egg. It’s important that the butter softens and the cold ingredients get to room temperature before baking. Make sure that all ingredients are measured out in advance in order to bake without hassle.
- 350°F is the recommended temperature for the oven.
Cookie Cake Preparation:
- Separately mix flour, cornstarch, baking soda, and salt.
- Take a stand mixer and put softened butter, brown sugar, and granulated sugar and make it creamy by beating it with a mixer.
- As the mixer is running, add the egg and vanilla and continue to beat.
- Now add the dry flour-prepared mixture to the beater bowl and turn your mixer speed to low speed.
- When it is mixed properly, fold it in chocolate and peanut butter chips.
- In an un-greased springform pan, place parchment paper on the bottom to prevent sticking.
- Press in your dough and bake on the center rack for 18-22 minutes. If you like a softer center, then it will be done in 20 minutes. As soon as your cookie cake is done baking, turn your oven to broil on HIGH and keep an eye on it. Approximately a minute later, the top will be golden, and the soft, slightly cookie dough-like center will remain. With mitts, please turn off the broiler and remove it from the oven.
- The cookie cake must be completely cooled before icing and slicing. After cooling, the cake will become firm in the middle.
