Ingredients:

  • Vanilla extract- 1 teaspoon 
  • Almond extract- 1 tablespoon 
  • Ground nutmeg- ½ teaspoon 
  • Butter- 2 cups 
  • White sugar- 2 cups 
  • Eggs- 9 large 
  • White rum (Optional)- ¼ cup 
  • Baking powder- 3 teaspoons 
  • Dark molasses- 1 cup 
  • All-purpose flour- 2 ½ cups 
  • Ground allspice- ½ teaspoon
  • Lime juice- 1 tablespoon 
  • Zest of one lime- 1 grated 
  • Chopped dried mixed fruit- 2 pounds 
  • Ground cinnamon- ½ teaspoon 
  • Salt- 1 pinch
  • Red wine- 2 cups

Directions:

  • Heat the overn to 350°F (175°C). You’ll need two 9-inch round cake pans. Grease them and place parchment paper in them.
  • Using an electric mixer, beat butter and sugar together until they are light and fluffy
  • Beat the eggs with the rum, lime juice, almond extract, vanilla and lime zest in a large bowl. Then add this in the bowl of a stand mixer in the mixture of butter and sugar.
  • Adding the dried fruit, wine, and molasses will make it taste even better.
  • In a large mixing bowl, combine flour, baking powder, nutmeg, allspice, cinnamon, and salt; mix gently. Pour the batter evenly into the prepared pans.
  • After 80 to 90 minutes of baking in the preheated oven, insert a toothpick and it should come out clean. After cooling for 10 minutes in the pan, turn it out onto a wire rack to finish cooling.
